fresh mint, finely chopped2 tbsp
Lebanese seven-spice (Baharat)1 tbsp

mayonnaise0.25 cup
slaw
red onion, very thinly sliced0.5 cup
ground sumac1 tbsp
lemon juice1 tbsp

Method

In a small bowl, toss the thinly sliced red onion with the sumac, lemon juice, and a pinch of salt. Let this sit and macerate while you prepare the burgers.

In a large bowl, combine the finely chopped salmon, parsley, mint, seven-spice, and salt. Gently mix with your hands and form into 4 distinct burger patties.

Heat the olive oil in a large skillet over medium-high heat. Fry the salmon patties for 3 to 4 minutes per side until they are nicely browned and just cooked through.

Remove the patties, and briefly toast the brioche buns cut-side down in the remaining pan juices.

Spread mayonnaise on the bottom half of each toasted bun, place a salmon patty on top, pile on the sumac onion slaw, and cover with the top bun.
